The 3rd Annual Ramen Festival will feature two levels of judging for best ramen in the universe: the “People’s Choice,” voted on by all of our guests, and “Critic’s Choice,” which will be selected by our special celebrity chef guests!


Shihomi Borillo

Shihomi Borillo is a partner and Creative Director at Azuki Sushi (2008) and Hachi Ramen (2017) in San Diego. She was born and raised in Yokohama, Japan. At the age of 16, she started working for a popular ramen shop in Yokohama where she took nearly every position in the business.

This is where she found her passion, to be in a hospitality industry. After finishing high school, Shihomi studied at San Diego State University majoring in Hospitality and Tourism Management and in Finance. While in college, Shihomi worked downtown at Sushi Bar Nippon where she met her future business partner, sushi chef Nao Ichimura.

In 2008, Shihomi opened her first restaurant Azuki Sushi with chef Nao. Nearly 10 years later, the duo opened a fast casual ramen shop called Hachi Ramen.


Jade Freedom

Born with a passport and insatiable taste for adventure, Jade Freedom is no stranger to distant lands and international cuisine.

Jade moonlights as DiningOutSD‘s popular #FoodNinja. Her immense excitement for food coupled with her bigger-than-life personality & enthusiastic energy makes her a well-known foodie and a favorite influencer. As the original “OG” Food Ninja (a role she’s held since 2014) Jade highlights and shares her culinary adventures in support of the Chefs and San Diego restaurant scene.

Intrigued by chefs and amazed at their creations, Jade strongly feels food is pure artistry and inspires to deliver a story that is as fascinating and compelling as that perfect bite!


Josh Kopelman 

Josh Kopelman is the founder and publisher of DiningOutSD in 2003. He is a food photographer who is proud that with over 6,600 Instagram posts there are only three selfies.

Mr. Kopelman helped to found the Chef Showdown to benefit Center for Community Solutions in 2005 which has raised over $1 million to fight domestic violence. He also created Battle of the Chef Bands and Farm to Table Tennis which are ongoing events that feature those talented folks in the hospitality industry.
He considers himself a fan of the San Diego food/beer/wine/spirits scene and seeing it grow to where it is today; an amazing community that tends to root for each other.
